I am proud to say that I can now prepare them with cinnamon, apples, nuts or fruits and have a perfect crumbly topping every time.

Here are two of my favorite recipes that are simple to prepare and great tasting too. I hope you will enjoy them as much as I do.
Quick Coffee Cake
Ingredients:
- 1/4 cup butter or margarine
- 1 cup flour
- 3/4 cup sugar
- 2 teaspoons baking powder
- 1 egg
- Milk
- Cinnamon
- Sugar
- Butter
Directions:
Melt butter or margarine and allow to slightly cool. Combine flour, sugar and baking powder. Pour butter into a measuring cup and add the egg. Add enough milk to make 1 cup of mixture. Add this to flour mixture and beat until smooth. Spread into a greased and floured 9×9 inch baking dish. Mix cinnamon and sugar to taste and sprinkle over dough. With a knife, cut through mixture so cinnamon and sugar will be marbled throughout the cake. Dot with butter and bake at 375 degrees for 30 minutes. Remove from oven and cut into squares while still warm.

Apple Coffee Cake
Ingredients:
- 3/4 cup margarine
- 1 egg
- 1 tablespoon milk
- 2 cups flour
- 1 teaspoon baking powder
- 4 or 5 apples, peeled and sliced thin
- 1 small package raspberry gelatin
- 1 cup sugar
Directions:
Cream 1/4 cup margarine, egg and milk. Add 1 cup of flour plus the baking powder and mix together. Pat dough into a 10×6 or 8×8 pan. Stand apple slices closely together into dough and sprinkle gelatin all over. Combine sugar, 1 cup flour and 1/2 cup margarine into a crumbly mixture. Sprinkle this all over the top of the cake and bake in a 350 degree oven for 30 minutes.
